In Tbilisi, wine bars pour from clay vessels older than most European capitals—Georgia has been fermenting grapes for 8,000 years. A supra unfolds over khachapuri and khinkali, voices rising into polyphonic harmonies found nowhere else.
Come in September for the harvest, treading grapes as folk dancers rehearse in village squares. The qvevri still go underground, and the towers still stand.
